Chocolate Chip Cookie Ice Cream Sandwiches

So keeping in the summer theme I thought it was about time there was some ice-cream fun, and why not throw in some chocolate chip cookies whilst we are at it and make some ice cream cookie sandwiches.
The cookies are great for the little peeps to get involved with, what with all the rolling and even if you don’t turn them into ice cream sandwiches, I am sure they will be enjoyed on fun days out.
Ice Cream & Chocolate Chip Cookie Sandwiches
For the cookies
250g plain flour
1/2 tsp bicarbonate of soda
1/2 tsp salt
170g unsalted butter, melted
100g soft dark brown sugar
100g soft light brown sugar
100g golden caster sugar
1 tbsp vanilla extract
1 large free ranged egg
1 larger free ranged egg yolk
200g chocolate chips
One tub of vanilla (or your flavour choice) ice cream
Preheat oven to 175ºC and line two baking sheets with baking parchment.
With an electric mixer, beat together the melted butter and all the sugars in a bowl until pale and creamy.
Then add the vanilla extract, egg and egg yolk and beat again until combined.
Sift in the flour, bicarbonate of soda and salt and mix briefly until just combined.
Using a wooden spoon, stir through the chocolate chips.
Take a walnut sized piece of the cookie dough and roll into a ball and place onto the prepared baking sheets, repeat the process (leaving a 4cm gap between each cookie ball to allow them to spread out slightly) until all the dough has been used up - this will make about 26 cookies.
Bake in the oven for 10-12 minutes, or until lightly golden. Remove from the oven and allow them to cool on the baking sheets before transferring them to a wire rack.
Whilst the cookies are baking bring the ice cream out of the freezer and allow it to soften to a spreadable consistency and then spread it out in a shallow tin to an even thickness, re freeze until needed.
Once the cookies have cooled, remove the ice cream tray from the freezer and using a cookie cutter, roughly the same size as the cookies, cut out circular rounds. Sandwich each ice cream disc between two cookies and there you have it!
