Apple Slices and Autumnal Weather


Well, after saying last week that there was the ‘in-betweeness’ of the seasons, it feels like a massive switch has been flicked and now things feel very definitely autumn like. Funnily enough, people over social media seem to have felt this too and there is a lot of talk of halloween and bonfire nights. I am not quite that far ahead, but I must admit I am a little excited for both of those festivities.

My apple haul wasn’t fully used up on last weeks apple turnovers, so not to let them go to waste I have another apple recipe to share with you today.

These slices are lovely in packed lunches, or for around 3pm when you need a cup of tea and a pick me up!

Apple Slices

For the base

300g plain flour

150g caster sugar

190g unsalted butter, melted

For the Filling

600g eating apples, peeled and cored

70g soft brown sugar

1/4 tsp ground cinnamon

40g pecan nuts

25g unsalted butter

  • Preheat oven to 180ºC, grease and line a 20cm square baking tin.

  • In a large bowl, thoroughly combine all the ingredients for the base until you have a crumbly dough. Tip half the dough into the prepared tin and press into the base to make an even layer. Leave in the fridge for 10 minutes to chill and get firmer.

  • Meanwhile, tip the pecan nuts into a small baking tin and roast in the oven for 5 minutes or until lightly toasted. Remove from the oven and leave to one side to cool.

  • Put the chilled base into the oven and bake for 20 minutes or until lightly golden.

  • Roughly chop the toasted pecan nuts into small pieces and set to one side.

  • Chop the apples into 1cm cubes and place into a medium saucepan along with the soft brown sugar, cinnamon and butter. Heat until bubbling and continue cooking for 5-10 minutes or until the juices have thickened.

  • Tip the apple mixture onto the baked base and spread out to cover it completely, then scatter over the chopped pecan nuts and then finally sprinkle the remaining crumbly dough over the top so that it covers the filling completely.

  • Bake in the oven for 20 minutes or until the topping looks golden brown.

  • Remove from the oven and allow to cool in the tin completely before you remove from the tin and cut into 9 squares.
