Chewy Ameretti of Dreams
You may have seen those crunchy little amaretti biscuits that get served with coffee at the end of a meal in an Italian restaurant…well these are completely different! These little gems are pale, light and chewy and deliciously nutty.
This recipe only requires four ingredients and is as simple as can be…
They would make a lovely gift wrapped up in baking parchment and twisted at the ends, like the real deal!
Chewy Ameretti of Dreams
150g golden caster sugar
175g ground almonds
2 large free ranged egg whites
1 tbsp amaretto liquore
100g icing sugar
Preheat oven to 170ºC and line a baking tray with parchment
Whisk the egg whites until they form stiff peaks, then gently fold in the remaining ingredients to make a thick paste.
Roll the paste into balls the size of whole walnuts and the coat liberally in the icing sugar.
Place on the baking tray, 5 cm apart and bake for 15 minutes until cracked and golden.
Leave to cool and then either store in an airtight box or wrap in baking parchment to give as gifts.
